Ingredients

  • 2 cups cooked rice
  • 1/2 bell pepper, sliced
  • 1/2 zucchini, sliced
  • 1/2 cup spinach
  • 2 eggs
  • 1 tbsp olive oil
  • Soy sauce or hot sauce to taste

Instructions

  1. Sauté bell pepper and zucchini in olive oil for 4–5 minutes.
