Ingredients
- 12 oz (340g) spaghetti
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1/2 onion, thinly sliced
- 4 cloves garlic, minced
- 4 cups vegetable broth
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- In a large pot, combine spaghetti, zucchini, tomatoes, onion, garlic, and vegetable broth.
- Bring to a boil over high heat.
- Reduce heat to medium and simmer, stirring occasionally, until pasta is al dente and liquid is mostly absorbed (about 10 minutes).
- Stir in fresh basil, season with salt and pepper, and serve warm.
