Ingredients

  • 12 oz (340g) spaghetti
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 onion, thinly sliced
  • 4 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, combine spaghetti, zucchini, tomatoes, onion, garlic, and vegetable broth.
  2. Bring to a boil over high heat.
  3. Reduce heat to medium and simmer, stirring occasionally, until pasta is al dente and liquid is mostly absorbed (about 10 minutes).
  4. Stir in fresh basil, season with salt and pepper, and serve warm.
